Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper—these puffs can stick, so this prevents any cleanup issues.
- In a bowl, thoroughly mash your cooked sweet potato and black beans until relatively smooth but with some texture remaining.
- Add oat flour, shredded carrots, egg, and melted coconut oil to the mashed mixture and stir until well combined—mixture should hold together when scooped.
- Scoop out small portions and gently shape them into bite-sized puffs on your prepared baking sheet (I make mine walnut-sized for Amber).
