  • ½ cup fresh mint leaves (spearmint or regular mint, never pennyroyal)

Instructions

  1. Wash spinach and mint leaves thoroughly—you’d be surprised how much dirt hides in those greens.
  2. In a food processor, pulse spinach and mint until finely chopped—no big chunks that could be choking hazards.
  3. Add Greek yogurt and melted coconut oil, then blend until completely smooth and creamy like a green smoothie.
