Ingredients

- 6 large eggs
- 2 cups fresh spinach, chopped
- ½ cup cottage cheese (low sodium)
- ¼ cup carrots, finely grated
- ½ teaspoon turmeric
- 1 tablespoon coconut oil (for greasing)
Instructions
- Preheat oven to 350°F (175°C)
- Grease an 8×8 inch baking dish with coconut oil
- Whisk eggs in a large bowl until well combined
- Add cottage cheese and whisk until smooth
- Fold in spinach, carrots, and turmeric
- Pour mixture into prepared dish
- Bake for 25-30 minutes until set
- Cool completely before cutting into squares
