Instructions
- Preheat your oven to 350°F (175°C) and grease a mini muffin tin thoroughly—these will stick without proper greasing.
- In a bowl, gently mix shredded chicken, finely chopped green beans, cooked quinoa, chicken broth, and beaten egg until well combined.
- Spoon the mixture evenly into the muffin tin, filling each cup about 3/4 full and pressing down lightly for even cooking.
- Bake for 20-25 minutes until nibbles are set and lightly browned on top—they should spring back when gently touched.
- Allow to cool completely in the tin before removing—this prevents sticking and makes them easier to handle safely.
