Ingredients

- 1 pound lean ground beef (90% lean)
- 2 cups cooked brown rice, cooled
- 2 large eggs
- 1 cup carrots, finely chopped
- ½ cup peas (fresh or frozen, thawed)
- ¼ cup fresh parsley, chopped
- 1 tablespoon olive oil (for greasing)
Instructions
- Preheat oven to 375°F (190°C)
- Cook brown rice according to package directions; let cool
- Brown ground beef in skillet, breaking into small pieces
- Drain excess fat from beef thoroughly
- In large bowl, mix rice, beef, eggs, carrots, peas, and parsley
- Grease 9×13 inch baking dish with olive oil
- Press mixture firmly into dish
- Bake 35-40 minutes until golden and firm
- Cool completely before cutting into squares
