Golden crispy potato pancakes stacked on a white plate, fresh and delicious. Perfect for breakfast or brunch, these classic potato fritters are a comfort food favorite, with crispy edges and tender interior.

Ingredients

Scale

  • 2 ripe bananas, mashed (natural sweetness and potassium)
  • 1/2 cup coconut flour (gluten-free fiber and protein)
  • 1 large egg
  • 1/4 cup coconut oil, melted (healthy fats for coat and skin)
  • 1/4 cup water (adjust as needed for dough consistency)
  • 1 tsp ground cinnamon (preferably Ceylon variety)

Instructions

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper—coconut flour dough can be sticky without it.
  2. Mash ripe bananas until mostly smooth but with some texture chunks—your dog will start getting excited from the tropical aroma.
  3. Mix mashed bananas with coconut flour, egg, melted coconut oil, water, and cinnamon until a workable dough forms.
  4. Let dough sit for 5 minutes to allow coconut flour to fully absorb moisture—patience creates the perfect texture.
  5. Roll out to 1/4 inch thickness on floured surface and cut into desired shapes—coconut flour behaves differently but creates amazing results.
  6. Place on prepared baking sheet and bake for 20-25 minutes until golden brown and firm to the touch.
  7. Cool completely before serving—these need time to develop proper texture and prevent burns!

Notes:

  • Use Ceylon cinnamon when possible—it’s milder and safer for dogs
  • Coconut flour absorbs more liquid than regular flour—adjust water as needed
  • Biscuits should feel set but not hard when done

Storage Tips:

  • Store at room temperature for 1 week in airtight containers
  • Refrigerate for up to 2 weeks for longer freshness
  • Freeze for up to 2 months (they thaw beautifully)
  • Coconut oil naturally helps preserve these treats

What Makes This Recipe Special:

Coconut flour provides gluten-free fiber and protein while bananas offer natural potassium for heart health. Coconut oil supplies medium-chain triglycerides that support brain function and coat health, making these both delicious and therapeutic.

Mix It Up (Dog-Safe Variations):

Extra Coconut: Use coconut milk instead of water for richer tropical flavor

Mini Training Size: Cut into tiny shapes perfect for reward-based training

Golden Turmeric: Add a pinch of turmeric with the cinnamon for joint support
